Today I tried to reflow a PCB for the first time. It did not went well. Can anybody tell me what did I do wrong?

I think your problem is that you are using low temperature solder paste with a high temperature solder paste profile. You might want to attach some thermocouples to verify.

It looks like you got all the paste to a liquidus stage and ten probably to a gas stage, so it is just a matter of running the mole several times.

Get yourself a KIK Oven and Wave Profiler. It will get you in the Ballpark before burning down the joint. Easy to use and talk to your paste supplier.

I would suggest to install bottom heater. The rest is absolutely OK. Is your plant ready to accept orders for space shuttles PCBAs and medical ones? I would place a couple of POs.

I would suggest N2O over straight Nitrogen, as you will immediately find your results more satisfying, and any defects will become less of an immediate concern.

In modern electronics, Reflow soldering is a very effective method for soldering printed circuit boards with lots of surface mount components. In some reflow ovens, the PCBs are snapped in a frame that touches the PCB only on the edges.

Your fixture is pulling too much heat from the assembly. I'd push the TAL to closer to 90.
