I think your problem is that you are using low temperature solder paste with a high temperature solder paste profile. You might want to attach some thermocouples to verify.

In modern electronics, Reflow soldering is a very effective method for soldering printed circuit boards with lots of surface mount components. In some reflow ovens, the PCBs are snapped in a frame that touches the PCB only on the edges.

Your fixture is pulling too much heat from the assembly. I'd push the TAL to closer to 90.
