Did you check each leg alone to ensure you have proper incoming voltage to the machine on each individual line? any other 3 phase issues in the building? do you have a UPS for pc and conveyor purposes? is that failing?

I don't know this exact oven, but usually it goes like that: First is a three phase power, then it is a contactor that is switching the power for the heaters and fans. than there are transformers for lower voltages. then there might be UPS system in
