I've seen many folks using IR guns for wave preheat profiles. Is this common? Is it less important to use a datalogger like Mole or Kic for wavesoldering?

IR guns do not measure the temperature at the laser dot. They measure the temperature at an ever increasing circle. (a big circle at any distance) I don't think you will get an accurate reading unless you hold the gun a few inches above the board after preheat.

I think wave has a wider process window and defects are more likely to get caught with visual inspection than for SMT.

But using a datalogger is still just as important.

I believe that most of those guns are only calibrated to be accurate when reading a non-reflective black surface. Board to board would mostly be accurate in comparing them, but if you are trying to hit a specific temp, you'll need a piece of dull black tape or something similar.
