I'm sorry for not being clear. The "1 thou" refers to the thickness of copper that rides below your ENIG.
If your HIC card is blue that's good. If it's some other color that makes you nervous, then you make of it what you will. They're pretty much meaningless to us. We keep reusing a coffee can full of them.
Beyond that, the "card is pink" has limited value without knowing more about the storage environment, packaging, time in storage, and what not.

Finally, on baking your boards, no one really knows, we'd just be guessing. Why no reflow a pasted [no components] board, and make an evaluation?
