at first , you need to optimise your panel design ( lenght width & postage stamp ) , use an anti-buckling cable during first reflow , and you can put trays under your panel during first reflow..

A reflow oven with Center rail support can help. If your volumes are too low to justify spending $$ on a proper carrier, titanium stiffeners applied to the PCB before it goes into reflow is a cheap, albeit manual solution.

Warpage of a completed assembly is an uncommon requirement. I would ask whoever is laying that requirement on you to define how they would like you to measure it.
